Coriander (Coriandrum sativum), native to the Eastern Mediterranean and Asia Minor, has been used as a vegetable and medicinal crop since ancient times.
This annual herbaceous plant is well known for its taste, dietary, medicinal, cosmetic and aromatic qualities. The seeds contain 0.68 to 0.9% coriander essential oil. The oil is used in perfumery, for the synthesis of a wide range of aromatic substances, in soap making, in the manufacture of liquors, and in medicine (usually to improve the taste and smell of medicines). Coriander fruits are used as a spice in the confectionery and food industries.
